EVERYDAY MOMENTS: BLUEBERRY PANCAKES.
When I wrote that fictional post about sugar therapy, I was sort of writing from personal thoughts and experiences. Not so much the break-up part, but rather, the cooking part. Cooking really is my therapy.
There's something about making something out of nothing that continues to surprise me. If I was being spiritual, I would probably note that it's like God making us, making the world out of nothing. But that truly bewilders me so I'll save that for another post and another day (creation really is amazing, though, right?).
But I digress. What I love about cooking is how a little measuring, pouring, stirring, and a little heat (of the oven or stove variety) makes something beautiful and (hopefully) very delicious.
It's powerful and empowering, if you think about it. And while I wish I had these same opinions and thoughts every time I cooked (trust me, there are times when I don't want to and am thankful for a mom who cooks for me!), I still find myself stopping and savoring the beauty of cooking.
It's amazing and another moment I don't want to forget.
This past Sunday, with church cancelled because of chilly weather, we had a lazy morning. A lazy weekend, really. I like cooking breakfast on the weekends because it's a chance to slow down, give my mom a break from cooking, and just enjoy each other's company. Cooking breakfast for the family is a treat and something I cannot wait to do with my own future family. But for now, I'll practice my cooking and recipes on my hungry family who never fails to compliment my cooking--no matter what I cook them.
This week's recipe was blueberry oatmeal pancakes. A little Greek Yogurt, some oats and flour, and a few other equally important ingredients whisked together. A heaping couple cups of defrosted summer blueberries, melted butter in the pan and the sizzle of the batter hitting the pan. The smell of fresh pancakes.
Yep, these are the everyday moments I want to remember.

I loooove blueberry pancakes, too. I don't actually get to eat pancakes all that often, but I always love the nostalgia that's associated with them. Definitely a childhood favorite, too!

Haha, you should! They really are amazing and the perfect weekend breakfast. Plus, they've got oats and some Greek Yogurt and blueberries, so that makes for a semi-healthier meal, right? :)
